how would I accomplish this if I don't run a linux box?

boot to a live cd then run mkfs.ext3 /dev/{whatever the hd partition is}

knoppix is popular though you could download the gentoo mininal disk (its tiny) and boot to that.

it won't reformat the drive I have in there now, or I wouldn't be asking ;)
