always did that growing up, sometimes a little brown sugar, cinammon, or crushed cloves (I mean powdered form, you wouldn't want to use them in their purest form on something like that ><) on top too.
there's nothing that you can't do with a sweet potato that you can't do with a regular one. you can slice them very thin and toss flavoring of your choice (i always went for garlic powder) and crisp them in the oven or broiler for homemade chips. that was always a favorite of some of my old clients who missed chips when they were trying to lose weight, mrs. dash is something to season with too since it's got no sodium in it.
You can always do mashed sweet potatoes and depending on what kind of mood you're in make it into a sweet type of dessert and mix it with some brown sugar and raisins and put some whip cream on top (cool whip free is great for that) or just mash them like regular mashed potatoes with milk etc
they're incredibly versatile, it totally depends on your tastes
