Does anyone have any favorites? With as many Texans as we have here, I'm hoping to get a couple good responses

secret ingredient to a good chili is a cinnamon stick
I generally use:
4lbs ground beef (or buffalo)
2x 14oz cans of crushed tomato
6-10x garlic cloves
4-6 tbsp chili powder
4 tbsp oregano
1 large onion
1 tbsp cilantro
1 tbsp worstershire sauce
salt and pepper to taste
1x 8oz can red kidney beans
chop the onion up semi fine
in a fry pan add some olive oil (or whatever oil you like) and cook the onion until it's soft/turning brown
add the garlic and some salt
now toss in the meat, and scramble fry it till it's mostly cooked
now dump in the rest of the stuff basically
you can finish it in the pot, or dump it all in a slow cooker at this point
sometimes I'll add a splash of red wine, or occassionally some flavourfull liqour at this point (brandy, whiskey, rum, etc)
last but not least, I'll toss in a whole cinnamon stick
It adds a certain something that people have a hard time placing
