Where did you get the tool to do the delicate work with that? I tried to do something with a lot of details that required I scrape some of the flesh off rather than carve, but I couldn't find any tools to do it, so I ended up using a small screwdriver >< Didn't come out so hot.
I am carving my kids' pumpkins as we speak. I took three pieces of printer paper last night, drew pumpkins on them, and gave my kids some crayola markers and told them to decorate their pumpkins and I would carve them. They wrote their names, eve. But now, I can't remember which pumpkin is which. So there are three half carved pumpkins on my counter right now.
An X-acto knife would probable be awesome for outlining the details, wish I had thought of that. The screw driver wasn't so nimble. I'm not sure how you would scoop it out though, or just peel off the top layer of pumpkin skin. I'd be afraid of snapping the delicate tip of the knife.

Exact-o knife is exactly what I used for the most part. You can really control how much you take off and where. Then to create the shine through just shave the inside of the pumpkin so that the outside keeps uniform shape and depth. Also used a compass for the circles. Only spent like 2-3 hours on it otherwise it would have looked a lot cooler. More leaves, and the tree would have wrapped around the side towards the back so it's more than just a hole in the front.

That skin is way softer than you think. Stay on the top layer and peal just the dark orange off. Leave the shading work to the inside so you don't have to make it pretty. Take your pumpkin from tonight and try it on one side. Just play around and you'll see all sorts of cool stuff you can do with these things.
