I'm actually really into the detailing thing. At an amateur level anyway. I got into it about 6 months ago, bought a bunch of product and went around cleaning friends cars and boats for free. 
I was bored I guess. They looked so pretty. My cars were made sexy and I got all the scratches out of my mitsu, so... yeah...
anyway...
If you think it's your fabrics that need to be washed, you need to do it the pro way... which is 'woolite'. Just buy a standard spray bottle and go one part woolite, 6 parts water... spray it on pretty heavy on all the fabric (cloth seats, carpet, floormats, etc) and then wet-vac it out. You can let the floormats air dry by themselves but it's best to just let the car dry out with the windows down in a covered space like a garage. The wet-vac will get most of the moisture out, so it won't take very long to dry. Clean interiors smell the best, in my opinion... you'll never truly replicate the 'new car' smell because that's just the combination of glues, leathers and new plastics that all fade or sun-bleach out with time.
So... for a clean interior...
1) clean the fabrics as noted above, and finish with Febreeze
2) clean the interior surfaces with a surface cleaner like Armor-All Interior cleaner, Turtle Wax, or the 'best' (IMO), Meguires Interior Quick Detailer...
3) clean the glass with an automotive glass cleaner (not windex).
And then you'll have a sparkly interior and hopefully the smell will go away.
There is one other source of stinky cars, and that 'can' be from the a/c... the simplest way to fix this is to change your interior cabin filter and then spray a healthy amount of lysol into your vents and run your heater on at half fan for a half hour or so. If you don't think that the a/c is the source of the stink, I wouldn't worry about this.
Lastly, you can take your car to a detailing shop and they'll do all the above, PLUS they have ozone generators that work magic... you'll breathe easier and love driving again. Actually, all this talk is making me want to go clean my car =/. Seriously, I'm finishing this paragraph and I'm grabbing my wet-vac... I hate you.
