First, I've seen some recommendations for software that auto edits out commercials, Any recommendations?
Also, I have my 360 I'm using primarily as a media extender. However, I have a regular old Xbox that is just gathering dust. I'd like to swap the two, and use the Xbox as a media extender. Does it work similarly, and is the Xbox Media Extender package still out there for sale?

dvrmstoolbox + showanalyzer will do post processing on all your recordings and strip commecials out
you can also use it to convert all the recordings to something like xvid/divx/etc if you intend to keep them long term
showanalyzer costs $10 I think, but you get a 2 week free trial with it, so check it out
as for using xbox as an extender, I'm not sure

i've had dvrmstoolbox up and running for just about a year now
showanalyzer does all the commercial skipping for you
you can set it to either cut the commercials out, or initially set it to just put in markers
ie, it'll mark the start and end of a commercial and autoskip for you
i started that way, just to make sure it wasn't fucking up, but i never found an instance where it missed any actual program
