mac n cheese recipe
this is from Hominy Grill, our chef's recipe in our book. I'm going to try it for Christmas, let me know if you try it and what you think!
3 tblspoons plain dry breadcrumbs
1 lb elbow macaroni
4 tblspoons butter
4 tblspoons flour
2 cups milk, scalded
2 1/2 cups white cheddar, grated
1/2 cup parmesan, grated
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon hot sauce
1/4 teaspoon worsterchire
350 oven
coat with butter and bread crumbs a 2 1/2 quart dish. Boil pasta. Melt butter on medium to low heat, add flour and whisk occasionally. Gradually add milk, reduce to low and simmer. Whisk occasionally til thickened. Remove from heat, stir in cheeses, season with salt and pepper and stir in elbows.
Place in crumbled pan and dust the top with remaining crumbs. Bake until golden and bubbly, approx 30-40 minutes.

why don't you try it, and then add your spicy as you like it. that's what I do.

i do something similar but i use 1 1/2 c white cheddar and 1 c monteray Jack.

it came out okay. too peppery and not creamy enough. at work, I've noticed they drop cream in it while they're cooking, so maybe next time I will use cream to bake it with and at the end put the bread crumbs on top so it'll stay extra creamy. creamy.

may I make a suggestion that sounds completely crazy, is healthier, and works amazingly well?
Mix in 1/2 to 1 cup of pureed steamed cauliflower into the mac & cheese during the mixing stage after adding the cheeses.
I swear you can't even taste it (though for myself, I add more because I *do* love the taste of cauliflower), doesn't mess with the texture, and makes the end product come out creamier than any Mac & Cheese I've ever had.
If it says anything, I have 2 of the pickiest eaters this planet has ever seen, and they both absolutely love it.

ya we cooked ours with whole whipping cream at the bistro. but we never put it in the oven
